Steak Bites

INGREDIENTS:
1 pound Sirloin Steak (without Much Gristle) OR Pre-cut Beef Tips
Kosher Salt To Taste
Fresh Ground Black Pepper To Taste
2 Tablespoons Butter

DIRECTIONS:
1. Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane cut them off.
2. Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings.
3. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.
4. Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan – if it doesn’t, the pan isn’t hot enough. Don’t stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds—just long enough to sear the outside of the meat but NOT cook the inside.
5. Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

My husband made these because he is the steak master. He loves steak, especially without a lot of marinade ingredients that distract from the pure meat flavor, and these bites did not disappoint. We served the steak bites with baked potatoes and roasted asparagus.

Steak Marinade

I am not a huge steak fan but I LOVE flank steak- it is thin, marinades well, and is delicious! This is also my favorite marinade and my parents always makes it for us when we visit their home.

Flank Steak Marinade

INGREDIENTS:
Flank Steak
1/2 cup honey
1/2 cup soy sauce
1/2 cup red cooking wine
3 garlic, pressed
1/4 tsp rosemary
1/4 tsp chili powder
1/4 tsp pepper

DIRECTIONS:
1. Combine all marinade ingredients together in bowl.
2. Put flank steak in 13x9 pan, or anything else that fits the steak.
3. With a fork, poke a few holes in the steak so the marinade can sink within the meat.
4. Pour marinade over meat.
5. Marinade for a few hours- the longer the better.

Steak Quesadillas

Steak Quesadillas

INGREDIENTS:
1 strip steak
1/2 tsp oregano
3 tsp olive oil
4 flour tortillas
1 1/2 cup pepperjack cheese, grated
1 red onion, sliced
1/3 cup sour cream

Black Bean Salsa:
1 can black beans, drained
1/2 cup cilantro, chopped
2 plum tomatoes
1 avocado, cut
1 TB lime juice
1/8-1/4 tsp cayenne pepper
salt and pepper

DIRECTIONS:
1. Rub steak with oregano season with salt and pepper.
2. Heat 1 tsp oil over high. Add steak, cook, turn once, until browned.
3. Cut into 1/4 inch thick strips.
4. Preheat oven to 425.
5. Brush one side of each tortilla with oil and place oil side down on two baking sheets.
6. Layer with cheese, onion, and steak. Top with remaining tortillas.
7. Bake, turning once until lightly brown and crispy.

1 cup honey
1/2 cup teriyaki sauce
2 TB chili powder
1/3 cup Tabasco sauce
1 tsp salt
1 cup sugar
juice of lemon
crushed red pepper

DIRECTIONS:
1. Blend and marinade.
