Cajun Chicken Pasta

INGREDIENTS:
1 (8 ounce) pkg penne pasta, cooked and drained
4 boneless skinless chicken breasts, cut into strips
4 t Cajun seasoning
4 T butter
16 slices red bell pepper
16 slices green bell pepper
1/2 purple onion
6 large mushrooms, sliced
2 c heavy cream
1/2 t dried basil
1/2 t lemon pepper seasoning
1/2 t salt
1/4 t pepper
1/4 t garlic powder
Grated Parmesan cheese, optional
DIRECTIONS:
1. Cook pasta, drain.
2. Place chicken and Cajun seasoning in a resealable plastic bag; shake to coat. In a large skillet over medium heat, saute chicken in butter until almost tender (about 5 to 7 minutes).
3. Add the red bell pepper, green bell pepper, and mushrooms. Saute and stir for 2 to 3 minutes. Reduce heat.
4. Add cream and remaining seasonings; heat through. Add pasta and toss; heat through. Sprinkle Parmesan cheese if desired.
This is one of our favorite pasta dishes! It is wonderful!
I cut this in half for just the two of us.

This tasted Amazing with some minor adjustments... I bought curry powder instead of cajun seasoning on accident and was stressed. Well I used about 2T. of curry powder and it was great. Everyone loved it!
Oh that is so frustrating when you buy the wrong ingredients, I hate that! That was probably a little interesting with curry powder but I'm glad it turned out ok. You will definitely have to try it with the cajun seasoning next time! Thanks for looking at the blog!
