Steak Quesadillas

Steak Quesadillas

1 strip steak
1/2 tsp oregano
3 tsp olive oil
4 flour tortillas
1 1/2 cup pepperjack cheese, grated
1 red onion, sliced
1/3 cup sour cream

Black Bean Salsa:
1 can black beans, drained
1/2 cup cilantro, chopped
2 plum tomatoes
1 avocado, cut
1 TB lime juice
1/8-1/4 tsp cayenne pepper
salt and pepper

1. Rub steak with oregano season with salt and pepper.
2. Heat 1 tsp oil over high. Add steak, cook, turn once, until browned.
3. Cut into 1/4 inch thick strips.
4. Preheat oven to 425.
5. Brush one side of each tortilla with oil and place oil side down on two baking sheets.
6. Layer with cheese, onion, and steak. Top with remaining tortillas.
7. Bake, turning once until lightly brown and crispy.
