Corn Chowder

Corn Chowder

INGREDIENTS:
2 cups water
2 cups potatoes, chopped
1/2 cup carrots, chopped
1/2 cup green onions, chopped
1 1/2 tsp salt
1/4 tsp pepper

White Sauce:
1/4 cup butter
1/4 cup flour
2 cups milk
1 1/2 cups cheese, shredded
1 can cream corn

DIRECTIONS:
1. Combine the water, veggies, and seasonings in a stock pot and cook until the veggies are soft.
2. Meanwhile, make the white sauce. In a saucepan, melt the butter and then whisk in the flour and milk. Boil until thickened. (Make sure you are stirring continuously to prevent it from sticking to the pan.)
3. Add the cheese and stir until melted.
4. Add the can of cream corn.
5. Combine the white sauce and veggies and heat through, but do not boil.

I just made this tonight and it was SO good. John even liked it, and he's not usually a big fan of soups.
