Fajita-Style Quesadillas

INGREDIENTS:
2 chicken breasts, marinated, grilled, and cut into strips
1/2 medium red and/or green sweet pepper, seeded and cut into bite-size strips
1/2 medium onion, halved and thinly sliced
2 tsp vegetable oil
4 flour tortillas
1/2 cup shredded Monterey Jack cheese
optional:
sour cream
salsa
avocados
cilantro
lime wedges
DIRECTIONS:
For Chicken:
I marinated 2 chicken breasts for several hours in this marinade. Grill on outdoor grill or cook over stove top.
Quesadillas:
1. In large skillet, cook peppers and onions in olive oil 3-5 minutes, until tender.
2. Butter or use cooking spray on one side of each tortilla. Place cheese, cooked vegetables, and grilled chicken, and a little more cheese on one side of tortilla buttered side down. Place second tortilla on top buttered side up. Cook and then flip.
3. Cut quesadillas and serve with salsa, sour cream, and avocado slices.
*Yum!! These were SO good and easy!! Everyone in my family enjoyed them. We served them with chips and salsa, black beans, and fruit.
