Chicken Tortilla Soup
4 boneless, skinless chicken breasts
1 chopped onion sauted in butter or 1/4 cup onion flakes
2 cans corn, not drained
2 cans chicken broth
1 cup milk
3 cans stewed tomatoes
2 cans cream of potato soup
1 can black beans
1 package taco seasonings
1. Put frozen chicken breasts in crock pot on low with one can chicken broth for a few hours. (Or I usually just boil the chicken and shred it.)
2. Pour all other ingredients in sauce pan, pull apart chicken, and add to pan.
3. Simmer until ingredients are hot and vegetables are tender.
3. Serve with fried tortilla strips, cheese, sour cream, and avocado.
