Citrus Sweet Chicken Burritos

Citrus Sweet Chicken Burritos

Chicken:
INGREDIENTS:
2 chicken breasts
1 cup chicken broth
1/2 tsp chili powder
4 TB lemon juice
1/2 tsp cumin
4 TB lime juice
2 TB sugar
1/4 tsp salt
1/2 tsp chicken bouillon

DIRECTIONS:
1. Boil chicken until cooked through (about 20 minutes). Remove from broth and shred with fork.
2. Place chicken in pot and add all ingredients.
3. Bring to a boil and simmer for 1/2 hour.

Rice:
INGREDIENTS:
1 cup rice
2 cups chicken broth
1/2 tsp chili powder
2 TB lemon juice
1 tsp cumin
3 TB lime juice
2 Tb sugar
1/4 tsp salt

DIRECTIONS:
1. Cook all ingredients over stove top or in rice cooker according to rice maker or rice directions.

Sweet Corn/Bean Topping:
INGREDIENTS:
1/2-1 sweet onion
1 TB butter
2 TB sugar or honey
1 can black beans
1 cup frozen corn

DIRECTIONS:
1. In a pan, saute onion with butter and sugar until golden brown.
2. Heat black beans and corn in microwave or stove top, then combine with onions.

Burritos:
DIRECTIONS:
1. Place a scoop of rice, a scoop of bean mixture, and chicken in a cooked flour tortilla.
2. Top with cheese, sour cream, and salsa.
