Spanish Rice

Spanish Rice

INGREDIENTS:
2 TB olive oil
1 onion, chopped
1 garlic glove, minced
2 cups medium or long grain rice
3 cups chicken stock
1 TB tomato paste or diced tomatoes
Pinch oregano
1 tsp salt

DIRECTIONS:
1. Brown rice, garlic, and onion in oil.
2. Bring stock to simmer.
3. Add rice, paste, oregano, and salt.
4. Simmer for 20 minutes.
